- Heat 1 tablespoon of olive oil over medium-high heat in a large skillet. Add beef, season with salt and pepper, and sauté for 4-5 minutes until browned. Remove beef and keep warm.
- In the same skillet, add another tablespoon of olive oil if needed. Toss in chopped onions, diced peppers, and mushrooms. Sauté for 5-7 minutes until tender.
- Return cooked beef to the skillet with vegetables. Add minced garlic and cook for an additional 2-3 minutes.
- Lay out tortillas. Spread mayonnaise on one side for creaminess. Spoon half the mixture onto one half of each tortilla and top with provolone cheese. Fold tortillas in half.
- In the same skillet, reduce heat to medium and lightly grease with olive oil. Cook each folded quesadilla for 3-5 minutes on each side until golden brown and crispy.
- Remove quesadillas from skillet, cool for a minute, slice into wedges, and serve warm.
