  • 1 pound Beef Thinly sliced ribeye or top round
  • 1 medium Onion Sweet or yellow onion preferred
  • 1 medium Red Pepper Diced
  • 1 medium Green Pepper Diced
  • 1 cup Mushrooms Diced
  • 8 ounces Provolone Cheese Mozzarella can be used as an alternative
  • 2 tablespoons Light Olive Oil For crispiness
  • 1 clove Garlic Minced
  • to taste Sea Salt
  • to taste Ground Black Pepper

  • to taste Mayonnaise For extra creaminess, optional

Step‑by‑Step Instructions
  1. Heat 1 tablespoon of olive oil over medium-high heat in a large skillet. Add beef, season with salt and pepper, and sauté for 4-5 minutes until browned. Remove beef and keep warm.
  2. In the same skillet, add another tablespoon of olive oil if needed. Toss in chopped onions, diced peppers, and mushrooms. Sauté for 5-7 minutes until tender.
  3. Return cooked beef to the skillet with vegetables. Add minced garlic and cook for an additional 2-3 minutes.
  4. Lay out tortillas. Spread mayonnaise on one side for creaminess. Spoon half the mixture onto one half of each tortilla and top with provolone cheese. Fold tortillas in half.
  5. In the same skillet, reduce heat to medium and lightly grease with olive oil. Cook each folded quesadilla for 3-5 minutes on each side until golden brown and crispy.
  6. Remove quesadillas from skillet, cool for a minute, slice into wedges, and serve warm.
