- Preheat your oven to 350°F (175°C) and coat a 9-inch cake pan with non-stick spray.
- Combine 1 cup brown sugar and 1/2 cup butter in a medium saucepan over medium heat for 3–5 minutes until syrupy.
- Pour the syrup into the prepared cake pan and scatter blueberries over top.
- Whip the egg whites in a clean bowl until stiff peaks form; set aside.
- Cream together 1/2 cup softened butter and 1 cup sugar until light; add egg yolks and vanilla.
- Sift together 1 1/2 cups flour, 2 teaspoons baking powder, and 1/2 teaspoon salt; alternate adding this with 1/2 cup milk in the mixture.
- Gently fold in the whipped egg whites into the batter.
- Pour the batter over the blueberries and bake for 55–60 minutes until golden brown.
- Cool for 5–10 minutes, then invert onto a platter to serve.
