Step-by-Step Instructions
  1. In a large bowl, combine the ground chicken, finely chopped onion, minced garlic, cilantro, mint, egg, breadcrumbs, cumin, coriander, smoked paprika, cayenne pepper, salt, and black pepper.
  2. Before forming all your koftas, cook a small patty in a non-stick skillet over medium heat for about 2-3 minutes per side to assess seasoning.
  3. With wet hands, shape the chicken mixture into elongated pieces, roughly 1.5 to 2 inches long.
  4. Cover and chill the shaped kofta in the refrigerator for at least 30 minutes.
  5. Heat a tablespoon of olive oil in a skillet over medium-high heat and carefully add the chilled kofta.
  6. While the kofta is cooking, prepare the creamy garlic yogurt sauce by mixing yogurt, dill, lemon juice, olive oil, and salt.
  7. Once cooked, transfer the kofta to a serving platter and drizzle the sauce over or serve it on the side.
