- In a large bowl, combine the ground chicken, finely chopped onion, minced garlic, cilantro, mint, egg, breadcrumbs, cumin, coriander, smoked paprika, cayenne pepper, salt, and black pepper.
- Before forming all your koftas, cook a small patty in a non-stick skillet over medium heat for about 2-3 minutes per side to assess seasoning.
- With wet hands, shape the chicken mixture into elongated pieces, roughly 1.5 to 2 inches long.
- Cover and chill the shaped kofta in the refrigerator for at least 30 minutes.
- Heat a tablespoon of olive oil in a skillet over medium-high heat and carefully add the chilled kofta.
- While the kofta is cooking, prepare the creamy garlic yogurt sauce by mixing yogurt, dill, lemon juice, olive oil, and salt.
- Once cooked, transfer the kofta to a serving platter and drizzle the sauce over or serve it on the side.
