  • 1 cup Red Bell Pepper or yellow/orange for a twist
  • 1 medium Red Onion or shallots as a substitute
  • 2 cloves Garlic (minced) fresh minced garlic yields the best results
  • 2 tablespoons Olive Oil opt for high-quality extra virgin
  • 1 teaspoon Dried Oregano fresh oregano is even better
  • 1 teaspoon Sea Salt reduce if using salted feta
  • 1 teaspoon Dried Thyme omit if not on hand
  • to taste Black Pepper & Red Pepper Flakes adjust for preferred heat level
  • 2 cups Baby Spinach (chopped) kale or Swiss chard are good alternatives
For the Eggs
  • 4 Large Eggs fresh eggs yield the best texture
For Topping
  • 1/4 cup Chopped Fresh Herbs such as basil or chives

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish or four individual ramekins, evenly distribute the cherry tomatoes, red bell pepper, red onion, and minced garlic. Place the feta cheese in the center.
  3. Drizzle everything generously with olive oil.
  4. Combine dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes. Sprinkle this over the feta and veggies.
  5. Bake for 25 minutes until veggies are soft and feta is golden.
  6. Remove from oven and stir in the chopped baby spinach.
  7. Make wells in the mixture and crack an egg into each well.
  8. Return to oven and bake for an additional 10 minutes until egg whites are set.
  9. Garnish with fresh herbs before serving warm.
