For the Ganache
  • 8 oz Semi-Sweet Chocolate Can use milk chocolate for a sweeter taste.
  • 1 cup Heavy Cream Ensures smooth ganache.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Combine graham cracker crumbs with melted unsalted butter in a bowl and press into the bottom of the springform pan. Bake for 10 minutes.
  3. Beat cream cheese until smooth. Gradually add sugar and Baileys, then fold in sour cream and add eggs one at a time.
  4. Pour filling into the cooled crust and bake for 50-60 minutes until edges are set.
  5. Let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.
  6. Heat heavy cream until simmering, then pour over chopped chocolate and stir until smooth to create ganache.
  7. Pour ganache over the cheesecake and let it set for 30 minutes before slicing.
