- In a mixing bowl, beat cream cheese and powdered sugar together until smooth and creamy. Form into 7 mounds and freeze for 20-30 minutes.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy. Add egg and vanilla, mix until combined. Gradually incorporate flour, baking soda, and salt until just combined.
- Preheat oven to 350°F (175°C). Scoop cookie dough into 14 portions and flatten slightly. Place a cheesecake mound in the center, drizzle with caramel, then cover with more dough.
- Arrange on the baking sheet and bake for 11-13 minutes until edges are golden. Let cool on baking sheet for 5 minutes, then transfer to wire rack.
