Step-by-Step Instructions
  1. Prepare the Salsa: In a nonstick skillet over medium heat, simmer your choice of salsa for about 5 minutes, stirring occasionally until it thickens slightly. Season to taste with salt or pepper, and set aside.
  2. Cook the Beans: Using the same skillet, add the refried beans and a tablespoon of the warm salsa. Stir to combine and warm for about 3-4 minutes. Mash partway for a smooth texture with some chunks.
  3. Fry the Tortillas: Heat a teaspoon of olive oil in a cast iron skillet over medium heat. Fry the corn tortillas for about 20 seconds per side until golden and crispy. Remove and stack.
  4. Fry the Eggs: Crack in the eggs in the skillet over medium heat. Cook for about 2.5 minutes until the whites are set and the yolks remain runny. Remove and place over tortillas.
  5. Assemble the Dish: Spread refried beans over each tortilla, add a sunny-side-up egg, a spoonful of warmed salsa, and your favorite toppings. Serve immediately.
