  • 1/2 cup Honey Substitute with maple syrup or agave if preferred.
  • 1/2 cup Lemon Juice Freshly squeezed for optimal taste.
  • 5 sprigs Fresh Thyme Use fresh for the best flavor.

  • 2 cups Sparkling Water Use still water or a mix with lemonade if desired.

Method
 

Making the Mocktail
  1. In a small saucepan, combine equal parts honey and freshly squeezed lemon juice along with a handful of fresh thyme sprigs. Place the saucepan over low heat, gently stirring the mixture until the honey fully dissolves. This should take about 3-5 minutes. Once combined, allow the syrup to simmer gently for 10-15 minutes, allowing the thyme to infuse its aromatic flavor.
  2. After the syrup has cooled slightly, set a fine-mesh strainer over a bowl or jar and pour the mixture through it to catch the thyme sprigs. Use the back of a spoon to press the syrup against the strainer, extracting as much liquid as possible.
  3. In a tall glass filled with ice cubes, add 1-2 tablespoons of your freshly strained honey lemon thyme syrup. Then, slowly pour sparkling water over the syrup, filling the glass. Stir gently with a long spoon to merge the flavors.
  4. To enhance your presentation, consider adding frozen lemon slices and a few sprigs of thyme on top.
