Preparation Steps
- Preheat your oven to 400°F (200°C). Wash the sweet potatoes and poke several holes in each potato with a fork.
- Place the potatoes on a baking sheet and roast them in the oven for about 45-60 minutes until soft.
- In a skillet over medium heat, cook the beef bacon until crispy (about 6-8 minutes). Transfer to a plate lined with paper towels.
- Slice each potato open lengthwise and fluff the insides. Sprinkle the chopped beef bacon on top.
- Spoon sour cream onto each potato and serve warm. Add optional toppings as desired.
