Preparation Steps
  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes and poke several holes in each potato with a fork.
  2. Place the potatoes on a baking sheet and roast them in the oven for about 45-60 minutes until soft.
  3. In a skillet over medium heat, cook the beef bacon until crispy (about 6-8 minutes). Transfer to a plate lined with paper towels.
  4. Slice each potato open lengthwise and fluff the insides. Sprinkle the chopped beef bacon on top.
  5. Spoon sour cream onto each potato and serve warm. Add optional toppings as desired.
