- Preheat your oven to 350°F (175°C) and lightly grease a standard muffin tin with cooking spray.
- Line each muffin cup with a slice of ham, pressing it against the sides and bottom to create a bowl shape.
- In a large mixing bowl, crack and beat the eggs, adding kosher salt and black pepper to taste.
- Pour the egg mixture into each ham-lined muffin cup until about three-quarters full.
- Sprinkle shredded cheddar on top of each filled cup.
