Step-by-Step Instructions for Garlic Parmesan Chicken Meatloaf
  1. Preheat your oven to 190°C (375°F). Gather a baking sheet lined with parchment paper or a greased loaf pan.
  2. In a large mixing bowl, combine ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and whole milk. Mix gently until just combined.
  3. Shape the mixture into a loaf (9 by 5 inches) and place it on the prepared baking sheet or into the greased loaf pan.
  4. Bake for 40 to 45 minutes, using a meat thermometer to check that it reaches 74°C (165°F).
  5. While the meatloaf is baking, melt unsalted butter in a saucepan, add minced garlic, sauté until fragrant, then stir in additional Parmesan and parsley.
  6. After initial baking, brush the glaze over the top of the meatloaf and bake for an additional 5 to 7 minutes.
  7. Remove from oven, let it rest for 5 minutes before slicing, and garnish with extra parsley.
