For the Noodles
  • 3 medium Zucchini spiralized
For Sautéing

  • 1 medium Red Bell Pepper sliced
  • 1 cup Carrots julienned
For the Sauce
  • 1/4 cup Low Sodium Soy Sauce or gluten-free soy sauce
  • 1 tablespoon Honey or maple syrup for vegan option
  • 1 tablespoon Rice Vinegar
  • 1/2 teaspoon Red Pepper Flakes adjust to taste

For Garnish
  • 2 tablespoons Green Onions chopped

Method
 

Cooking Steps
  1. Sauté the chicken in 1 tablespoon of olive oil over medium-high heat for 5-7 minutes until golden brown. Set aside.
  2. In the same pan, add another tablespoon of olive oil, then add minced garlic for 1 minute until fragrant.
  3. Add sliced red bell pepper and julienned carrots, stir-fry for 3-4 minutes until slightly softened.
  4. Whisk together soy sauce, honey, rice vinegar, grated ginger, and red pepper flakes in a small bowl.
  5. Return cooked chicken to the pan, pour in the sauce, and stir everything together for about 2-3 minutes.
  6. In another pan, sauté spiralized zucchini in the remaining tablespoon of olive oil for about 2 minutes.
  7. Combine zucchini with the chicken and vegetable mixture. Toss until coated with sauce.
  8. Garnish with chopped green onions and sesame seeds before serving.
