  • 1 cup Chocolate Chips Use milk chocolate or white chocolate chips for a different flavor.

Method
 

Steps to Prepare
  1. Preheat the oven to 160°C (320°F) with a fan or 170°C (338°F) for conventional settings. Line a baking tray with parchment paper.
  2. Melt dark chocolate and butter in a heatproof bowl over a pot of simmering water until smooth, about 5 minutes. Mix in vanilla extract.
  3. In a separate bowl, whisk eggs, caster sugar, and demerara sugar until thick and fluffy, about 5 minutes.
  4. Sift together plain flour, cocoa powder, baking powder, and salt. Fold in chocolate chips.
  5. Gently fold melted chocolate mixture into the egg mixture without overmixing.
  6. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  7. Scoop the batter onto the lined baking tray, leaving space for spreading. Bake for 12-14 minutes.
  8. Let the brookies cool on the tray for about 10 minutes before transferring to a wire rack.
