Method
 

Step-by-Step Instructions
  1. In a small bowl, combine the fresh lemon juice with kosher salt, stirring until the salt dissolves completely. Slowly drizzle in the extra-virgin olive oil while whisking vigorously to create a smooth dressing.
  2. In a separate large bowl, add your diced beetroot and pour half of the dressing over them. Gently toss to coat evenly and let marinate for about 5 minutes.
  3. While marinating, wash and dice the cucumber into bite-sized pieces. Set aside.
  4. Just before serving, sprinkle the chopped cucumber over the marinated beets along with crumbled feta and chopped dill. Pour the remaining dressing on top.
  5. Gently mix all ingredients together for about 1-2 minutes, being careful not to break up the feta too much.
  6. Transfer the salad to a serving bowl, garnish if desired, and enjoy fresh.
