- In a small bowl, combine the fresh lemon juice with kosher salt, stirring until the salt dissolves completely. Slowly drizzle in the extra-virgin olive oil while whisking vigorously to create a smooth dressing.
- In a separate large bowl, add your diced beetroot and pour half of the dressing over them. Gently toss to coat evenly and let marinate for about 5 minutes.
- While marinating, wash and dice the cucumber into bite-sized pieces. Set aside.
- Just before serving, sprinkle the chopped cucumber over the marinated beets along with crumbled feta and chopped dill. Pour the remaining dressing on top.
- Gently mix all ingredients together for about 1-2 minutes, being careful not to break up the feta too much.
- Transfer the salad to a serving bowl, garnish if desired, and enjoy fresh.
