- In a mixing bowl, combine warm milk, sugar, and active dry yeast. Allow to sit for 5-10 minutes until frothy.
- In a large bowl, whisk together flour and salt. Add yeast mixture, melted butter, and beaten egg. Stir until a rough dough forms.
- Knead dough on a floured surface for 8-10 minutes until smooth and elastic.
- Place kneaded dough in a greased bowl, cover, and let rise in a warm area for about 1 hour until doubled.
- For pesto, blend spinach, basil, garlic, pine nuts, olive oil, and Parmesan until smooth.
- After the dough rises, punch it down and roll into a rectangle. Spread pesto and slice into strips. Twist into shamrock shapes and place on a greased baking sheet.
- Cover rolls with a towel and let rise for 30-45 minutes until puffy.
- Preheat oven to 375°F (190°C) and bake rolls for 20-24 minutes until golden brown.
