- In a stand mixer, combine 4 cups of all-purpose flour, 1 tablespoon of sugar, and 1 packet of instant yeast. Gradually pour in 1½ cups of warm milk (around 110°F) and ¼ cup of melted butter. Mix on medium speed for 4-5 minutes until the dough is smooth and elastic.
- Cover the dough and allow it to rise for 30-60 minutes until it doubles in size.
- Preheat your oven to 450°F. Line two baking sheets with parchment paper.
- Punch the dough down, divide into 12 portions, and roll each into a ¾-inch thick rope. Cut them into 1-2 inch pieces.
- Drop the pretzel bites into boiling baking soda water for 30 seconds and remove with a slotted spoon.
- Whisk together 1 egg with 1 tablespoon of water. Brush the pretzel bites with this mixture and sprinkle with coarse salt.
