- Preheat your oven to 200°F (95°C) and gather your ingredients and equipment.
- In a large bowl, combine flour, yeast, salt, and poppy seeds. Whisk until blended.
- In another bowl, mix buttermilk, sugar, and butter. Microwave until warm, about 30-45 seconds.
- Combine the warm buttermilk mixture with the dry ingredients and mix until a shaggy dough forms.
- Add eggs one at a time, mixing until incorporated for a sticky yet elastic dough.
- Fold in lemon zest and gradually add flour until dough is tacky but not sticky.
- Cover the bowl with a kitchen towel and let the dough rest for 10-20 minutes.
- Mix together sugar and additional lemon zest in a bowl, then add softened butter and mix until smooth.
- Roll out the dough into a rectangle about 12 x 18 inches and spread the filling mixture over.
- Roll the dough into a log from one long side and slice into 12 even pieces.
- Place the rolls in a greased 9x13-inch pan, cover with foil, and allow to rise for 30 minutes.
- Preheat the oven to 350°F (175°C) and bake the rolls for 28-32 minutes until golden brown.
- While baking, whisk together powdered sugar, lemon juice, and melted butter for icing.
- Once out of the oven, drizzle icing over warm rolls and sprinkle with additional lemon zest.
