Step-by-Step Instructions
  1. Preheat your oven to 200°F (95°C) and gather your ingredients and equipment.
  2. In a large bowl, combine flour, yeast, salt, and poppy seeds. Whisk until blended.
  3. In another bowl, mix buttermilk, sugar, and butter. Microwave until warm, about 30-45 seconds.
  4. Combine the warm buttermilk mixture with the dry ingredients and mix until a shaggy dough forms.
  5. Add eggs one at a time, mixing until incorporated for a sticky yet elastic dough.
  6. Fold in lemon zest and gradually add flour until dough is tacky but not sticky.
  7. Cover the bowl with a kitchen towel and let the dough rest for 10-20 minutes.
  8. Mix together sugar and additional lemon zest in a bowl, then add softened butter and mix until smooth.
  9. Roll out the dough into a rectangle about 12 x 18 inches and spread the filling mixture over.
  10. Roll the dough into a log from one long side and slice into 12 even pieces.
  11. Place the rolls in a greased 9x13-inch pan, cover with foil, and allow to rise for 30 minutes.
  12. Preheat the oven to 350°F (175°C) and bake the rolls for 28-32 minutes until golden brown.
  13. While baking, whisk together powdered sugar, lemon juice, and melted butter for icing.
  14. Once out of the oven, drizzle icing over warm rolls and sprinkle with additional lemon zest.
