Step-by-Step Instructions
  1. In a mixing bowl, combine ground chicken with garlic powder, paprika, salt, and pepper. Mix until evenly distributed.
  2. Heat a skillet over medium heat and add the seasoned chicken mixture. Cook for 8-10 minutes, breaking apart until fully cooked.
  3. In a blender, mix together cottage cheese, ranch seasoning, and lemon juice until smooth. Stir in a splash of pickle brine.
  4. In a separate skillet, heat small tortillas over medium for about 30 seconds on each side until warm.
  5. On each tortilla, spread a layer of ranch sauce, then add cooked chicken filling, cheese, pickles, and cabbage.
  6. Melt a thin layer of shredded cheese in the skillet. Place a filled taco over the cheese, pressing gently, then flip to crisp.
  7. Remove from the skillet and serve warm with extra pickles and tortilla chips.
