Step-by-Step Instructions
  1. In a large pot, combine the chicken broth and beef broth with chopped onion, diced carrot, sliced celery, and minced garlic. Stir these ingredients together over medium-high heat until the mixture begins to meld, about 5 minutes.
  2. Once your broth mixture is bubbling, keep a close eye to prevent spills and let it boil vigorously for about 3 minutes.
  3. Reduce the heat to low and let the soup simmer gently for 30 minutes.
  4. After simmering, carefully strain the soup through a fine mesh sieve into a clean pot.
  5. Return the strained broth to medium heat, adding soy sauce, sesame oil, sea salt, and black pepper. Stir these ingredients gently for about 10 minutes.
  6. If you're using mushrooms, stir them in now and let the soup simmer for an additional 5 minutes.
  7. Ladle the hot soup into bowls and garnish with freshly sliced green onions.
