Step‑by‑Step Instructions
  1. Wash and thinly slice about two inches of fresh ginger root. Bring 1.5 cups of water to a gentle boil, then add the sliced ginger. Simmer for 3-4 minutes, then remove from heat, cover, and steep for 10-20 minutes.
  2. Stir in 0.5 cups of honey into the steeped ginger water until it dissolves. Strain the mixture through a fine mesh sieve into a bowl or pitcher. Combine the ginger syrup with 2.5 cups of cold water.
  3. Pour in the freshly squeezed juice of 3-4 lemons into the pitcher. Stir well and adjust sweetness or lemoniness to your taste.
  4. Refrigerate the lemonade for at least 30 minutes. Serve over ice, garnished with lemon slices or fresh mint leaves if desired.
