Step‑by‑Step Instructions for Berry Oat Bars
  1. Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking pan with non-stick spray.
  2. In a large mixing bowl, combine all dry ingredients: flour, quick oats, coconut sugar, baking powder, and salt. Add melted coconut oil and maple syrup, stirring until well blended.
  3. Take two-thirds of the mixture and press it firmly into the bottom of your prepared baking pan, creating an even base layer.
  4. Spread the raspberry preserves over the base layer, leaving a ½ inch border around the edges.
  5. Crumble the remaining dough over the preserves, ensuring even coverage and pressing down gently.
  6. Bake for 25 to 30 minutes until the top is golden brown.
  7. Remove from oven and let it cool on a wire rack for about 10-15 minutes before slicing into squares or rectangles.
