  • ¾ cup warm water for dough hydration
  • 2 tablespoons oil vegetable or sesame oil substitute
Filling Ingredients
  • 1 pound ground beef or ground pork/chicken, or veggie protein
  • 1 piece green onion chopped
  • 1 piece onion finely chopped
  • 1 tablespoon oyster sauce soy sauce as vegetarian alternative
  • 1 tablespoon soy sauce low-sodium if preferred
  • ½ teaspoon black pepper white pepper as milder option
  • 1 teaspoon ginger grated or ground ginger as substitute
  • 2 tablespoons water for filling moisture

Method
 

Dough Preparation
  1. In a mixing bowl, combine 2 cups of all-purpose flour with a pinch of salt, ¾ cup of warm water, and 2 tablespoons of oil. Stir until a shaggy dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic. Cover and let it rest for 30 minutes.
Filling Preparation
  1. Mix 1 pound of ground beef with 1 chopped green onion, 1 finely chopped onion, 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, ½ teaspoon of black pepper, and 1 teaspoon of grated ginger. Stir in 2 tablespoons of water to keep the mixture moist.
Forming the Pies
  1. Roll out the dough until ¼ inch thick, cut into 8 equal pieces. Roll each piece into a circle and place about 2.5 tablespoons of filling in the center. Fold and pinch the edges tightly to seal.
Preparing for Cooking
  1. Brush a small amount of water on the smooth side of each pie and sprinkle with black and white sesame seeds.
Cooking the Pies
  1. Heat 3 tablespoons of oil in a non-stick skillet over medium heat. Place the pies in the pan, cover, and cook for about 4 minutes or until the bottoms are golden brown. Flip and cook for another 3-4 minutes until crispy.
Serving
  1. Remove the pies from the pan and place on a paper towel-lined plate. Serve warm with dipping sauces like chili oil or black vinegar.
