  • 1/2 cup blueberries can substitute with raspberries or blackberries
  • 1/2 cup feta cheese can substitute with goat cheese or blue cheese
  • 1/3 cup pecans can substitute with walnuts or almonds
For the Balsamic Glaze
  • 1/2 cup balsamic vinegar high-quality preferred, or use red wine vinegar
  • 2 tablespoons honey or brown sugar; maple syrup is a great substitute

Method
 

Balsamic Glaze Preparation
  1. In a small saucepan, combine balsamic vinegar and honey over medium heat. Stir and bring to a gentle boil. Reduce heat and simmer until thickened, about 10 minutes.
Salad Assembly
  1. In a large mixing bowl, add baby spinach as the base. Fold in sliced strawberries, blueberries, and crumbled feta cheese. Toss gently.
Pecan Toasting
  1. Toast pecans in a dry skillet over medium heat for 3-5 minutes, stirring frequently, until fragrant and golden. Allow to cool.
Glaze Drizzling
  1. Drizzle the cooled balsamic glaze over the salad ensuring even coverage for flavor and presentation.
