Step-by-Step Instructions
  1. Pulse rolled oats in a food processor until they reach a coarse flour-like consistency, about 20-30 seconds.
  2. Add softened Medjool dates, shelled pistachios, almond butter, sweetener, vanilla extract, chia seeds, and salt. Blend for 1-2 minutes until sticky and clumping.
  3. Gently fold in dried cranberries using a spatula, maintaining some chunks.
  4. Line an 8x8-inch pan with parchment paper. Transfer mixture to the pan, pressing down firmly, about half an inch thick.
  5. Chill in the refrigerator for 1-2 hours until firm and easy to slice.
  6. Remove from the pan and slice into squares or bars. Optionally drizzle with melted dark chocolate or top with extra pistachios.
  7. Store in an airtight container in the refrigerator for up to 10 days, or freeze for up to 3 months.
