For the Meatballs
  • 1 lb Ground Chicken or ground turkey or beef
  • 1 cup Panko Breadcrumbs use gluten-free for gluten-free option
  • 1 cup Crushed Pineapple drained well
  • 1/4 cup Milk or almond/oat milk for dairy-free
  • 1/4 cup Reduced-Sodium Soy Sauce or tamari for gluten-free
  • 1 cup Green Onions chopped
  • 2 cloves Garlic Cloves minced
  • 1 tbsp Fresh Ginger grated or ground ginger as substitute
  • 1/2 tsp Black Pepper optional
For the Teriyaki Sauce
  • 1/2 cup Brown Sugar or coconut sugar as alternative
  • 1/2 cup Water
  • 1 tbsp Cornstarch or arrowroot powder as substitute

Method
 

Cooking Steps
  1. Preheat your oven to 500°F (260°C) and prepare a baking dish.
  2. In a large mixing bowl, combine all meatball ingredients and mix well.
  3. Form the mixture into golf ball-sized meatballs and place them on the baking dish.
  4. Bake the meatballs for approximately 15 minutes until golden brown.
  5. In a skillet, combine the teriyaki sauce ingredients and stir continuously until dissolved.
  6. Mix cornstarch with water to form a slurry, add to the sauce, and simmer until thick.
  7. Coat the baked meatballs in the teriyaki sauce.
  8. Serve over jasmine rice or quinoa and enjoy!
