  2. In a large mixing bowl, combine sweetened shredded coconut, sweetened condensed milk, pure vanilla extract, and a pinch of salt. Mix until cohesive and sticky, about 2-3 minutes.
  3. Take a tablespoon-sized portion of the coconut mixture, flatten it, place a small scoop of chilled chocolate filling in the center, and seal it to form a ball. Repeat with remaining mixture and filling.
  4. Refrigerate formed Coconut Cookie Balls for 20-30 minutes to firm up.
  5. Melt dark chocolate chips and coconut oil in a microwave-safe bowl in 15-second intervals until smooth, about 1 minute. Cool slightly and drizzle over chilled cookie balls.
