Prep and Bake
- Begin by preheating your oven to 350°F (175°C). While it heats, grease a 9-inch springform pan with cooking spray or butter.
- In a large mixing bowl, sift together the dry ingredients. Gradually add the wet ingredients and mix until smooth.
- Pour the batter into the prepared springform pan and bake for 15-18 minutes or until a toothpick comes out clean.
- Let the cake cool completely, then refrigerate for about 30 minutes.
Prepare Cream Cheese Mixtures
- In a medium bowl, combine vanilla cream cheese ingredients and beat until smooth.
- In another bowl, blend chocolate cream cheese ingredients until smooth and homogenous.
Create Whipped Cream and Assemble
- Hydrate gelatin in cold water, then whip heavy cream until stiff peaks form. Fold gelatin into whipped cream and into both cream cheese mixtures.
- Carefully spread the chocolate mixture over the cooled cake, then layer the vanilla mixture on top. Chill for at least 1 hour.
Prepare Ganache and Decorate
- In a saucepan, heat heavy whipping cream and butter until simmering, then stir in chocolate chips until melted.
- Drizzle the ganache over the chilled cake and decorate with white chocolate and mini chocolate chips, then chill for another 15-20 minutes.
- Slice and serve with clean cuts using a hot knife, and enjoy!
