Method
 

Prep and Bake
  1. Begin by preheating your oven to 350°F (175°C). While it heats, grease a 9-inch springform pan with cooking spray or butter.
  2. In a large mixing bowl, sift together the dry ingredients. Gradually add the wet ingredients and mix until smooth.
  3. Pour the batter into the prepared springform pan and bake for 15-18 minutes or until a toothpick comes out clean.
  4. Let the cake cool completely, then refrigerate for about 30 minutes.
Prepare Cream Cheese Mixtures
  1. In a medium bowl, combine vanilla cream cheese ingredients and beat until smooth.
  2. In another bowl, blend chocolate cream cheese ingredients until smooth and homogenous.
Create Whipped Cream and Assemble
  1. Hydrate gelatin in cold water, then whip heavy cream until stiff peaks form. Fold gelatin into whipped cream and into both cream cheese mixtures.
  2. Carefully spread the chocolate mixture over the cooled cake, then layer the vanilla mixture on top. Chill for at least 1 hour.
Prepare Ganache and Decorate
  1. In a saucepan, heat heavy whipping cream and butter until simmering, then stir in chocolate chips until melted.
  2. Drizzle the ganache over the chilled cake and decorate with white chocolate and mini chocolate chips, then chill for another 15-20 minutes.
  3. Slice and serve with clean cuts using a hot knife, and enjoy!
