Method
 

Dressing Preparation
  1. In a small bowl, whisk together rice vinegar, tamari, sesame oil, maple syrup, minced garlic, grated ginger, chili crunch, and a pinch of salt. Mix until smooth and cohesive.
  2. Set the dressing aside to let the flavors meld together for about 1-2 minutes.
Salad Assembly
  1. In a large mixing bowl, dice cucumbers into bite-sized pieces.
  2. Add shelled edamame and chopped fresh herbs. Gently toss to combine.
Mix Salad and Dressing
  1. Drizzle the prepared dressing over the cucumber and edamame mixture. Toss to coat everything well.
