- Spray the inside of your slow cooker with olive oil to prevent sticking.
- Arrange the chicken breasts in a single layer at the bottom of your slow cooker.
- Pour the marinara sauce over the chicken and add the seasonings and chicken broth.
- Cover the slow cooker and set it to LOW for about 4 hours.
- Once cooked, shred the chicken in the slow cooker and stir to combine.
- Add the cheese tortellini, mozzarella cheese, and heavy cream, and stir to combine.
- Cover and cook on LOW for an additional 30 minutes.
- Stir in the baby spinach and let it wilt for about 10 minutes.
- Sprinkle in the grated Parmesan cheese before serving and adjust the seasoning if needed.
