Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add gnocchi and cook until they float, about 2-3 minutes. Remove and set aside.
  2. In a large frying pan, heat olive oil over medium-high heat until shimmering, about 2 minutes.
  3. Add drained gnocchi to the hot pan in a single layer. Cook undisturbed for 2-3 minutes until golden brown.
  4. Gently flip gnocchi to ensure even crispness and cook for another 2-3 minutes.
  5. Lower the heat slightly and stir in minced garlic. Cook for 1 minute until fragrant.
  6. Add fresh spinach and stir in, cooking for 2-3 minutes until wilted.
  7. Season with salt, black pepper, and red pepper flakes. Remove from heat.
  8. Fold in crumbled feta cheese gently to integrate its creamy tang.
