- In a shallow bowl, combine all-purpose flour, garlic powder, paprika, salt, and black pepper. Mix thoroughly to create a crispy shell for the cod bites.
- In a separate bowl, crack and beat the large eggs until well combined. This acts as a binder for the panko breadcrumbs.
- Pour the panko breadcrumbs into a third bowl for easy coating.
- Dip a piece of cod first into the flour mixture, then into the beaten eggs, and finally coat with panko breadcrumbs.
- Heat about ½ inch of vegetable oil in a skillet over medium-high heat until it reaches around 350°F (175°C).
- Add the coated cod bites to the hot oil in batches, frying for 3-4 minutes on each side until golden brown and crispy.
- Transfer fried cod bites to a plate lined with paper towels to absorb excess oil.
- In a bowl, combine mayonnaise, Greek yogurt, lemon juice, lemon zest, dill, parsley, and minced garlic. Stir until smooth.
