Ingredients
  

For the Cod Bites
  • 1 lb Cod fillets Can substitute with haddock or pollock
  • 1 cup All-purpose flour Can substitute with gluten-free flour
  • 1 tsp Garlic powder Fresh garlic can be used
  • 1 tsp Paprika
  • 1 tsp Salt Adjust based on dietary preferences
  • 1 tsp Black pepper
  • 2 large Eggs
  • 2 cups Panko breadcrumbs Regular breadcrumbs can be used but will yield a less crunchy exterior
  • ½ cup Vegetable oil Can replace with canola or peanut oil
For the Creamy Lemon Herb Dip
  • ½ cup Mayonnaise
  • ½ cup Greek yogurt Sour cream is a suitable alternative
  • 2 tbsp Lemon juice Fresh lemons are ideal
  • 1 tbsp Lemon zest Fresh lemons are ideal
  • 1 tbsp Fresh dill Can substitute with other herbs
  • 1 tbsp Fresh parsley Can substitute with other herbs
  • 1 clove Minced garlic Adjust garlic quantity for stronger flavor
  • to taste Salt To taste
  • to taste Pepper To taste

Method
 

Steps
  1. In a shallow bowl, combine all-purpose flour, garlic powder, paprika, salt, and black pepper. Mix thoroughly to create a crispy shell for the cod bites.
  2. In a separate bowl, crack and beat the large eggs until well combined. This acts as a binder for the panko breadcrumbs.
  3. Pour the panko breadcrumbs into a third bowl for easy coating.
  4. Dip a piece of cod first into the flour mixture, then into the beaten eggs, and finally coat with panko breadcrumbs.
  5. Heat about ½ inch of vegetable oil in a skillet over medium-high heat until it reaches around 350°F (175°C).
  6. Add the coated cod bites to the hot oil in batches, frying for 3-4 minutes on each side until golden brown and crispy.
  7. Transfer fried cod bites to a plate lined with paper towels to absorb excess oil.
  8. In a bowl, combine mayonnaise, Greek yogurt, lemon juice, lemon zest, dill, parsley, and minced garlic. Stir until smooth.
  9. Serve the crispy cod bites on a platter with the creamy lemon herb dip.
