Ingredients

For the Fries
  • 2 medium Zucchini Can swap with yellow squash
  • 1 cup Panko Bread Crumbs Regular breadcrumbs can be used but might not achieve the same crunch
  • 1/2 cup Grated Parmesan Cheese Can substitute with Pecorino Romano or Grana Padano
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 large Large Eggs
  • 1 tablespoon Cooking Spray For healthier fry

Equipment

  • air fryer

Method

Step-by-Step Instructions
  1. Start by washing and drying the zucchinis thoroughly to remove any dirt and excess moisture. Trim off the ends, then cut them into strips that are about 3-4 inches long and ½ inch thick.
  2. In a shallow bowl, combine panko bread crumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Use a fork to blend the ingredients well until they are uniformly mixed.
  3. In a separate bowl, crack the large eggs and beat them until fully combined.
  4. Set your air fryer to preheat at 375°F (190°C) for approximately 5 minutes.
  5. Dip each zucchini strip into the beaten eggs, allowing any excess egg to drip off. Then, roll the strip in the panko mixture, pressing gently to ensure the coating adheres well.
  6. Carefully place the coated zucchini fries in the air fryer basket, ensuring they are arranged in a single layer without overlapping.
  7. Lightly spray the zucchini fries with cooking spray.
  8. Cook the zucchini fries in the preheated air fryer for 10-12 minutes, shaking the basket halfway through.
  9. Remove the zucchini fries from the air fryer and serve them immediately with your favorite dipping sauce.
