Cooking Steps
- Heat 2 tablespoons of olive oil in a skillet over medium-low heat.
- Sear the sea scallops for 2-3 minutes on each side until golden brown.
- Sauté 3-4 cloves of minced garlic in the skillet until fragrant, about 30 seconds.
- Pour in 1 cup of heavy cream and bring to a gentle simmer while stirring.
- Stir in 1/2 cup chopped sun-dried tomatoes and 1 tablespoon Italian seasoning and simmer for 2-3 minutes.
- Add 1 pound of large shrimp and 2 cups of baby spinach, cooking until shrimp are pink and spinach wilts.
- Return the seared scallops and stir in 1/2 cup grated Parmesan cheese.
- Serve hot, garnished with additional Parmesan if desired.
