  • 1 pound Large Shrimp peeled and deveined
  • 1 pound Sea Scallops patted dry
Sauce
  • 3-4 cloves Garlic minced
  • 1 cup Heavy Cream or half-and-half
  • 1/2 cup Grated Parmesan freshly grated
  • 1/2 cup Sun-Dried Tomatoes chopped
  • 1 tablespoon Italian Seasoning
Veggies
  • 2 cups Baby Spinach or kale
Cooking Oil
  • 2 tablespoons Olive Oil
Seasoning
  • to taste Salt
  • to taste Pepper
  • optional Red Pepper Flakes

Method
 

Cooking Steps
  1. Heat 2 tablespoons of olive oil in a skillet over medium-low heat.
  2. Sear the sea scallops for 2-3 minutes on each side until golden brown.
  3. Sauté 3-4 cloves of minced garlic in the skillet until fragrant, about 30 seconds.
  4. Pour in 1 cup of heavy cream and bring to a gentle simmer while stirring.
  5. Stir in 1/2 cup chopped sun-dried tomatoes and 1 tablespoon Italian seasoning and simmer for 2-3 minutes.
  6. Add 1 pound of large shrimp and 2 cups of baby spinach, cooking until shrimp are pink and spinach wilts.
  7. Return the seared scallops and stir in 1/2 cup grated Parmesan cheese.
  8. Serve hot, garnished with additional Parmesan if desired.
