- Ensure cream cheese or coconut cream is at room temperature and gather medium strawberries, removing stems and rinsing them gently.
- In a blender or food processor, blend prepared strawberries until smooth to create strawberry puree.
- Combine cream cheese or coconut cream, yogurt, and powdered sugar in a mixing bowl. Add strawberry puree and optional vanilla bean paste. Blend until smooth and fluffy.
- Transfer mousse into serving dishes, cover, and chill for at least 30 minutes.
- Remove from fridge, garnish with fresh strawberries, whipped cream, or cookie crumbles before serving.
