- Begin by bringing a pot of salted water to a rolling boil. Carefully add the fresh or frozen sweet peas to the boiling water and blanch them for 2-3 minutes until they turn bright green and tender. Immediately transfer the peas to a bowl of ice water to stop the cooking process.
- While the peas are cooling, gather the scallions, garlic, basil, mint, lemon, and feta. Slice the scallions and grate the garlic, ensuring all ingredients are prepped for blending.
- In a food processor, combine the blanched peas, sliced scallions, grated garlic, chopped basil, and mint leaves. Add the juice and zest of the lemon, along with half of the crumbled feta. Pulse the mixture until smooth and creamy.
- Taste the dip and adjust the seasoning as necessary, adding kosher salt or more lemon juice until you achieve the desired consistency.
