  • 1 pound Boneless Skinless Chicken Breasts Or thighs; can swap with shrimp or tofu.
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used.
  • 1 teaspoon Onion Powder Finely diced fresh onion for added flavor.
For the Creamy Sauce
  • 2 tablespoons Butter Can substitute with olive oil for a dairy-free option.
  • 3/4 cup Heavy Cream Or half & half; coconut milk for dairy-free.
  • 2 cups Chicken Broth Replace with vegetable broth for vegetarian option.
  • 1 teaspoon Dried Thyme Use three times the amount of fresh herbs.
  • 1 teaspoon Dried Rosemary Use three times the amount of fresh herbs.
  • 1 teaspoon Dried Oregano Use three times the amount of fresh herbs.
  • 1/2 cup Parmesan Cheese Grated; can substitute with nutritional yeast.
For the Rice
  • 1 cup Basmati Rice Can substitute with jasmine rice.
  • Salt Salt and Black Pepper Adjust to taste.
For Garnish
  • 1/4 cup Fresh Parsley Chopped; can use chives.
  • Lemon Zest Optional for garnish.

Method
 

Step-by-Step Instructions
  1. Pat dry the chicken and season with garlic powder, onion powder, paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden, then set aside.
  2. In the same skillet, reduce heat, melt butter, and sauté finely diced onion for 3-4 minutes. Add minced garlic and cook for 30 seconds.
  3. Add rinsed basmati rice to the skillet and stir for about a minute. Pour in chicken broth, season with salt and pepper, and bring to a boil. Cover and simmer for 15-18 minutes until rice is tender.
  4. Stir in heavy cream, thyme, rosemary, and oregano. Add Parmesan cheese and mix until melted and creamy.
  5. Nestle chicken back into the skillet and simmer covered for 10 minutes.
  6. Remove from heat, let rest, and garnish with parsley and lemon zest before serving.

Notes

Rinse basmati rice well to prevent stickiness. For richer sauce, simmer uncovered to thicken. Customize with proteins or veggies as desired.
