Ingredients

For the Pasta
  • 12 oz fettuccine pasta Swap for gluten-free pasta as needed.
For the Sauce
  • 4 tbsp butter Can be replaced with olive oil for a lighter twist.
  • 2 tbsp all-purpose flour Consider cornstarch for a gluten-free alternative.
  • 2 cups whole milk Half-and-half can elevate creaminess, or choose dairy-free milk.
  • 4 oz cream cheese Try Neufchâtel for a lower-fat option.
  • ¾ cup freshly grated Parmesan cheese Pecorino Romano works as a substitute.
  • ½ tsp garlic powder Fresh minced garlic yields a bolder taste.
  • ½ tsp onion powder Feel free to omit for a milder flavor.
  • Salt and white or black pepper Adjust to taste.
For the Crab
  • 8 oz lump crabmeat Fresh crab is ideal; pasteurized canned crab works.
For the Garnish
  • 2 tbsp chopped fresh parsley Substitute dried parsley if fresh isn't available.

Equipment

  • Large Pot
  • large skillet
  • Whisk

Method

Step-by-Step Instructions
  1. Begin by boiling a large pot of salted water over high heat. Add fettuccine and cook until al dente, about 8-10 minutes. Drain and reserve a cup of pasta water.
  2. In a large skillet, melt butter over medium heat until it begins to foam. Whisk in flour constantly for 1 minute until bubbly and golden.
  3. Gradually pour in milk while whisking to prevent lumps. Whisk until smooth and begins to thicken, about 3-4 minutes. Add cream cheese and stir until melted.
  4. Sprinkle in Parmesan, garlic powder, and onion powder. Mix well and allow to melt and meld for about 2-3 minutes. Season with salt and pepper.
  5. Gently fold in crabmeat and heat for 2-3 minutes until warmed through.
  6. Add the cooked fettuccine to the skillet and toss to coat. If too thick, add reserved pasta water for desired consistency. Garnish with parsley.
