Chai Preparation
- Boil 1½ cups of water in a medium-sized pot over medium-high heat. Once boiling, add cinnamon stick, crushed cardamom pods, sliced fresh ginger, and whole cloves. Simmer for 5 minutes.
- Add black tea leaves or bags to the pot. Stir and steep for 3 to 5 minutes, then remove from heat.
- Pour in 1 cup of coconut milk and return it to low heat. Stir well and heat through for 2 to 3 minutes.
- Add coconut sugar to taste, stirring until dissolved.
- Strain the mixture into cups, discarding solids, and serve hot or over ice.
