Making the Ice Cream
- Blend low-fat cottage cheese in a blender on high for about 30 seconds until smooth and creamy.
- Add frozen blueberries, honey or maple syrup, vanilla extract, and fresh lemon juice. Blend on medium speed until well combined, leaving some blueberry flecks.
- Pour the mixture into a freezer-safe container and smooth the top with a spatula.
- Place the container flat in the freezer for at least 4 hours or until firm.
- Let the ice cream sit at room temperature for about 5 minutes before serving.
- Scoop into bowls or cones and top with fresh blueberries, granola, or honey.
