Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Grease a large ovenproof casserole dish with butter or olive oil.
  3. Layer one quarter of the thinly sliced potatoes at the bottom of the dish.
  4. Sprinkle a third of the chopped onions and carrots over the potato layer, followed by corned beef, adding salt and pepper.
  5. Repeat layers of potatoes, onions, carrots, and corned beef, finishing with a top layer of potato.
  6. Pour the beef stock evenly over all layers and brush the top layer with melted butter.
  7. Cover the dish with parchment paper and aluminum foil, then bake for 50 minutes.
  8. Remove the parchment and foil and bake uncovered for another 15-20 minutes until golden brown.
  9. Let it rest for a few minutes before serving.
