- Preheat your oven to 180°C (350°F).
- Grease a large ovenproof casserole dish with butter or olive oil.
- Layer one quarter of the thinly sliced potatoes at the bottom of the dish.
- Sprinkle a third of the chopped onions and carrots over the potato layer, followed by corned beef, adding salt and pepper.
- Repeat layers of potatoes, onions, carrots, and corned beef, finishing with a top layer of potato.
- Pour the beef stock evenly over all layers and brush the top layer with melted butter.
- Cover the dish with parchment paper and aluminum foil, then bake for 50 minutes.
- Remove the parchment and foil and bake uncovered for another 15-20 minutes until golden brown.
- Let it rest for a few minutes before serving.
