Step-by-Step Instructions
  1. In a large pot over medium heat, add the Italian beef sausage, breaking it into crumbles with a wooden spoon. Cook for 6–8 minutes, stirring occasionally, until browned and fully cooked.
  2. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  3. Pour in the diced tomatoes along with the chicken broth, stirring to combine. Bring to a gentle boil and let bubble softly for about 5 minutes.
  4. Add the gnocchi directly to the soup, gently stirring them in. Cook for 3–4 minutes, or until the gnocchi float to the surface.
  5. Lower the heat to medium-low and add the heavy cream, stirring gently to blend. Simmer for an additional 5 minutes until slightly thickened.
  6. Taste and season with salt and pepper as desired. Garnish with fresh spinach or basil if desired and serve immediately.
