- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
- Beat in 2 large eggs one at a time and stir in 1 teaspoon of vanilla extract.
- Whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of baking powder, and ¼ teaspoon of salt. Gradually add this to the creamed mixture.
- Divide the dough, roll each portion to ¼-inch thickness, and cut into 3-inch fries.
- Transfer to the baking sheet and bake for 12-15 minutes until edges are golden.
- To prepare the frosting, beat together 4 ounces of softened cream cheese and ½ cup of butter until smooth, then mix in 2 cups of powdered sugar.
- Serve the cookie fries with the frosting dip.
