  • 1 teaspoon Smoked Paprika Regular paprika can be used for a milder flavor.
  • 1 cup Vegetable Broth Chicken broth can be swapped for added flavor.
  • ¼ cup Heavy Cream Coconut cream can be a vegan alternative.
  • ½ cup Fresh Basil Adjust according to your basil preference.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 450°F (230°C). Halve the Campari tomatoes and arrange them in a large baking dish along with the onion and garlic.
  2. Drizzle the vegetables with olive oil and sprinkle with kosher salt, oregano, and smoked paprika. Toss gently.
  3. Place the baking dish in the oven and roast for 30 to 40 minutes, tossing halfway through.
  4. Remove the roasting pan and allow to cool slightly. Transfer everything to a large pot, adding fresh basil, and blend until smooth.
  5. Stir in vegetable broth and heavy cream, heating over medium for about 5 minutes. Adjust seasoning to taste.
  6. Ladle the soup into bowls and garnish with additional basil. Serve with a grilled cheese or salad if desired.
