  • 3 ripe bananas mashed
  • 0.5 cup granulated sugar can substitute with coconut sugar
  • 0.5 cup brown sugar light or dark can be used interchangeably
  • 0.33 cup unsalted butter melted
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract pure vanilla preferred
  • 1 teaspoon baking soda ensure freshness
  • 0.5 teaspoon salt balances sweetness
  • 1.5 cups all-purpose flour gluten-free flour can be used as a substitute
  • 1 tablespoon ground cinnamon freshly ground offers stronger aroma
For the Cinnamon Swirl
  • 2 tablespoons granulated sugar
For the Glaze
  • 1 cup powdered sugar can be substituted with a sugar alternative
  • 2 tablespoons milk any type will do

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, mash the 3 ripe bananas until smooth. Stir in the granulated sugar, brown sugar, melted unsalted butter, eggs, and vanilla extract until well combined.
  3. Sprinkle the baking soda and salt over the mixture. Gradually add the flour while stirring gently until just combined.
  4. In a small bowl, mix 2 tablespoons of granulated sugar with 1 tablespoon of ground cinnamon and set aside.
  5. Pour half of the banana batter into the loaf pan. Sprinkle half of the cinnamon sugar mixture on top.
  6. Pour the remaining banana batter over the cinnamon layer. Sprinkle the rest of the cinnamon sugar mixture on top.
  7. Gently swirl through the batter with a skewer or knife.
  8. Bake for 50-60 minutes until a toothpick comes out clean.
  9. Allow to cool in the pan for 10-15 minutes before transferring to a wire rack.
  10. Whisk together 1 cup of powdered sugar and 2 tablespoons of milk to prepare the glaze.
  11. Drizzle the glaze over the cooled bread and let it set before slicing.
