Method
 

Step-by-Step Instructions
  1. Preheat your oven to 160°C (320°F) and prepare an 8 x 8-inch baking pan by lining it with baking paper.
  2. Crush the digestive biscuits into fine crumbs, then combine with melted butter and press firmly into the bottom of the prepared baking pan.
  3. In a mixing bowl, beat the cream cheese until smooth, then gradually add sugar, salt, and vanilla. Mix in eggs one at a time.
  4. Toss the prepared apples with sugar, lemon zest, cinnamon, and nutmeg in a separate bowl.
  5. Rub chilled butter into flour, demerara sugar, and granulated sugar until it resembles coarse crumbs.
  6. Pour cheesecake filling over crust, layer spiced apples on top, and sprinkle crumble topping evenly.
  7. Bake for 45-50 minutes or until crumble topping is golden brown and the filling is set with a slight jiggle.
  8. Allow to cool completely, then refrigerate for at least 3 hours. Serve drizzled with caramel sauce.
