- Combine 1 cup of old-fashioned rolled oats, 1 cup of almond/coconut/cashew milk, ½ cup of coconut yogurt, 2 tablespoons of chia seeds, 2 tablespoons of pure maple syrup, 1 teaspoon of vanilla extract, and the zest of half a lemon in a mixing bowl.
- Cover and refrigerate the mixture for at least 4 hours or overnight.
- To make the blueberry chia compote, combine 1 cup of fresh blueberries, 2 tablespoons of chia seeds, 2 tablespoons of maple syrup, the juice of half a lemon, and another teaspoon of vanilla extract in a small saucepan. Cook on medium heat for about 10 minutes.
- Remove from heat and let the compote cool for about 10 minutes.
- Serve the soaked oats in bowls topped with the warm blueberry chia compote and crumbled granola.
