  • 1 cup almond/coconut/cashew milk use your preferred plant-based milk
  • ½ cup coconut yogurt non-vegans can use Greek yogurt

  • 1 cup blueberries use strawberries or raspberries if desired
  • 2 tablespoons chia seeds ground flax seeds as a substitute
  • 2 tablespoons pure maple syrup adjust to your liking or use raw honey if not vegan
  • 1 teaspoon vanilla extract for a twist, use almond extract
  • ½ lemon lemon zest lime zest can be used for a different zing

Method
 

Step-by-Step Instructions
  1. Combine 1 cup of old-fashioned rolled oats, 1 cup of almond/coconut/cashew milk, ½ cup of coconut yogurt, 2 tablespoons of chia seeds, 2 tablespoons of pure maple syrup, 1 teaspoon of vanilla extract, and the zest of half a lemon in a mixing bowl.
  2. Cover and refrigerate the mixture for at least 4 hours or overnight.
  3. To make the blueberry chia compote, combine 1 cup of fresh blueberries, 2 tablespoons of chia seeds, 2 tablespoons of maple syrup, the juice of half a lemon, and another teaspoon of vanilla extract in a small saucepan. Cook on medium heat for about 10 minutes.
  4. Remove from heat and let the compote cool for about 10 minutes.
  5. Serve the soaked oats in bowls topped with the warm blueberry chia compote and crumbled granola.
