Ingredients
  

For the Base
  • 1 cup Dairy or Non-Dairy Milk Almond or oat milk recommended.
  • 1 cup Old-Fashioned Oats Quick oats won't give the same texture.
  • 1/2 cup Plain Greek Yogurt Use a thinner yogurt for a lighter mix.
  • 1/4 cup Smooth Natural Peanut Butter Almond butter or sunflower seed butter can be used.
For Sweetening and Flavor
  • 2 tablespoons Honey or Pure Maple Syrup Can substitute with brown sugar or agave nectar.
  • 1 tablespoon Chia Seeds Omit if not available.
  • 1 teaspoon Pure Vanilla Extract
  • 1 pinch Kosher Salt Balances sweetness.
For Toppings
  • 1/4 cup Bittersweet Chocolate Chips Or use fruit preserves or Nutella.
  • Optional Toppings Sliced bananas, chopped roasted peanuts, and cocoa nibs are recommended.

Method
 

Preparation Steps
  1. In a blender, add your choice of dairy or non-dairy milk, old-fashioned oats, Greek yogurt, smooth natural peanut butter, honey or maple syrup, chia seeds, pure vanilla extract, and a pinch of kosher salt.
  2. Secure the lid on the blender and blend all the ingredients for about 30 to 60 seconds until a creamy, smooth consistency is achieved.
  3. Carefully pour the blended mixture into a jar or suitable container, ensuring it can hold the volume as the oats will expand.
  4. Cover the jar securely and refrigerate for at least 4 hours or overnight to allow the oats to absorb the liquid and thicken.
  5. When ready to serve, take the jar out and mix in a splash of milk if the mixture is too thick.
  6. Add your favorite toppings and enjoy your creamy blended peanut butter overnight oats either chilled or at room temperature.
