Ingredients
  

For the Sofrito
  • 2 tablespoons Neutral Oil For sautéing
  • 1 medium Onion Finely chopped
  • 2 tablespoons Pickled Jalapeños Chopped
  • 2 cloves Garlic Finely chopped
  • 2 tablespoons Tomato Paste
For the Beef
  • 1 pound Ground Beef Cooked until browned
  • 2 tablespoons Taco Seasoning
For the Assembly
  • ½ cup Shredded Cheddar Cheese
  • ½ cup Pepper Jack Cheese
  • 2 tablespoons All-Purpose Flour For flour paste
  • 1 tablespoon Fresh Lime Juice For flour paste
  • 12 pieces Corn Tortillas Warm to keep pliable
For the Crema
  • ½ cup Sour Cream
  • 2 tablespoons Chopped Cilantro
  • 1 tablespoon Lime Juice

Method
 

Preparation
  1. Heat neutral oil in a skillet over medium heat. Add chopped onion and jalapeños, sauté for about 5 minutes.
  2. Add garlic and tomato paste, cooking until caramelized for 3-4 minutes.
  3. Incorporate ground beef, taco seasoning, and salt; cook until browned, about 6-8 minutes.
  4. Cool the mixture while preparing tortillas.
Filling and Cooking
  1. Mix cheddar and pepper jack in a bowl. Prepare flour paste with lime juice.
  2. Warm tortillas in the microwave for 30 seconds. Fill each with beef mixture and cheese, roll tightly sealing with flour paste.
  3. Preheat oven to 400°F or heat oil for frying. Arrange taquitos seam-side down on a baking sheet if baking.
  4. Bake for 15-20 minutes or fry for 5 minutes until golden brown. Drain on paper towels if fried.
Serving
  1. Serve taquitos garnished with cilantro and chilled crema, alongside guacamole and pico de gallo.
