Step-by-Step Instructions for Baked Five Spice Chicken
  1. Preheat your oven to 400°F (204°C).
  2. In a medium bowl, whisk together the salt, five spice powder, fish sauce, rice wine vinegar, soy sauce, coconut sugar, optional brandy, and minced garlic until combined.
  3. Place the chicken thighs into a large Ziploc bag, then pour the marinade over them. Seal the bag tightly and shake gently to ensure that every piece is coated in the mixture. Allow to marinate for at least 15 minutes.
  4. Heat a large, oven-safe pan over medium-high heat. Add the marinated chicken thighs to the pan, searing them for about 5 minutes on each side until golden-brown.
  5. Transfer the pan directly to the preheated oven. Bake the chicken thighs for 30-35 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Once cooked, carefully remove the pan from the oven and plate the chicken over a bed of jasmine rice. Top with sliced cucumbers.
