  • 1 large Egg (for wash)
For the Filling
  • 2 tablespoons Olive Oil Or butter
  • 1 medium Shallot Diced
  • 2 cloves Garlic Minced
  • 4 cups Fresh Spinach Packed
  • 8 ounces Cream Cheese Softened
  • 1/2 cup Heavy Cream
  • 1/2 cup Parmesan Cheese Grated
  • 1/4 teaspoon Nutmeg Omit if not available
For the Topping
  • 4 large Large Eggs Essential ingredient
  • 2 tablespoons Chives For garnish

Method
 

Preparation Steps
  1. Thaw puff pastry sheets for 30–40 minutes on the counter.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Cut thawed pastry sheets into 4-inch squares, score a smaller square inside each piece.
  4. Prepare egg wash by beating the egg and apply it to the edges of the pastry squares.
  5. Bake pastry squares for 12–15 minutes until golden brown, then cool and create wells.
  6. Sauté shallots in olive oil for 3–5 minutes, add garlic and spinach until wilted.
  7. Combine spinach mixture with cream cheese, heavy cream, Parmesan, nutmeg, salt, and pepper.
  8. Fill pastry wells with spinach mixture and create indentations. Crack an egg into each well.
  9. Bake again for 10–15 minutes until egg whites are set and yolks are runny.
  10. Garnish with chopped chives and serve immediately.
