Preparation Steps
- Thaw puff pastry sheets for 30–40 minutes on the counter.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut thawed pastry sheets into 4-inch squares, score a smaller square inside each piece.
- Prepare egg wash by beating the egg and apply it to the edges of the pastry squares.
- Bake pastry squares for 12–15 minutes until golden brown, then cool and create wells.
- Sauté shallots in olive oil for 3–5 minutes, add garlic and spinach until wilted.
- Combine spinach mixture with cream cheese, heavy cream, Parmesan, nutmeg, salt, and pepper.
- Fill pastry wells with spinach mixture and create indentations. Crack an egg into each well.
- Bake again for 10–15 minutes until egg whites are set and yolks are runny.
- Garnish with chopped chives and serve immediately.
